Apple Stuffed Pork Loin Recipe

Apple Stuffed Pork Loin

Pork loin is a very lean cut of meat. If there is any fat, it’s typically found on the outside of the loin where it can be easily trimmed off. An unfortunate downside to the meat being so lean is that it can become very dry and tough. One method for preventing the roast from drying out is to stuff the loin. This recipe for Apple Stuffed Pork Loin combines the mild and somewhat sweet flavor of pork with the tartness of Granny Smith apples for a really nicely balanced flavor.

Turkey & Bean Chili

Bean and Turkey Chili

The fall and winter means sweater weather. My favorite time of the year! This also means that it’s soup weather. It’s probably not cold enough as yet but I’m getting the party started with turkey and bean chili. I’ve made chili several times before but decided to try adding a bit of ground turkey this time around. Until recently I only tolerated turkey around Thanksgiving but I’ve found that making it in other forms is quite good. The meat is incredibly lean, can be cooked in a variety of ways, and tastes great if seasoned well. And on to the recipe!

Roasted Duck

Roasted Duck with Roasted Potatoes and Sauteed Vegetables

As promised in last week’s post, here is the recipe for the roasted duck. I pretty much use this recipe whenever I make duck but with a few variations to the spices. To be clear, this is not a Peking duck recipe. It’s a simple roast duck recipe that I think is great for special occasions and holidays.

Not-So-Secret Sauce: Blended Seasoning

A guide for making my super not-so-secret blended seasoning. It works as a marinade base for meat but can also be used to flavor soups, beans, rice, etc.

Bacon Pork Burgers with Baked Seasoned French Fries

Bacon Pork Burger with Seasoned French Fries

The manner in which you assemble the burger is completely up to you and your personal preferences. I don’t like wet bread so I toasted the burger bun after slicing it in half. I went with bottom bun, burger, sweet relish mixed with ketchup, bacon, and then the top bun. I imagine the burger would be ever better with a bit of cheese on top but I’m trying to cut down on dairy. How do you like your burger?
