Apple Stuffed Pork Loin

Pork loin is a very lean cut of meat. If there is any fat, it’s typically found on the outside of the loin where it can be easily trimmed off. An unfortunate downside to the meat being so lean is that it can become very dry and tough. One method for preventing the roast from drying out is to stuff the loin. This recipe for Apple Stuffed Pork Loin combines the mild and somewhat sweet flavor of pork with the tartness of Granny Smith apples for a really nicely balanced flavor.

The fall and winter means sweater weather. My favorite time of the year! This also means that it’s soup weather. It’s probably not cold enough as yet but I’m getting the party started with turkey and bean chili. I’ve made chili several times before but decided to try adding a bit of ground turkey this time around. Until recently I only tolerated turkey around Thanksgiving but I’ve found that making it in other forms is quite good. The meat is incredibly lean, can be cooked in a variety of ways, and tastes great if seasoned well. And on to the recipe!

Last week I got a sudden craving for biscotti. This was weird because the first and the last time I ate or made biscotti was in 1998 or 1999 and I didn’t like it (way too much chocolate). I searched the internet and cobbled together this recipe from some ingredients and directions that I found on allrecipes.com and seriouseats.com. Like most cookies it goes well with coffee or tea but I had mine with hot chocolate.
